5 Fun Things To Do During Snowmaggedon

How are you surviving Snowmaggedon?

My go to is to make homemade soup before shoveling out of the snow. I’ve made french onion soup, minestrone and sweet potato. You’ll find the sweet potato soup recipe at the end of this post.

Have you been experiencing ‘cabin fever’ like me?

Barre 3 has been a life saver for me. It’s a great way to keep your body moving and grab a cup of coffee with a friend afterwards.

It’s also fun catching up with creative endeavors you dream about doing ‘someday.’

Bread baking is one of the most therapeutic activities I’ve used to enjoy the hours inside.

Super Easy Sweet Potato Soup

Ingredients (I used leftover baked sweet potatoes for this soup recipe.)

1 Tablespoon of flour

1 Tablespoon of unsalted butter

1 1/2 cups of chicken broth

1 Tablespoon dark brown sugar

2 cups of cooked sweet potatoes (I like to bake them and the skin peels right off)

1/8 Teaspoon of ginger

1/4 Teaspoon of cinnamon

1/8 Teaspoon of nutmeg

1 cup of milk (I use 2% A2 milk because it’s easier to digest)

In a heavy sauce pot cook the butter and flour over medium to low heat to make a roux.

Add the broth and brown sugar and bring to a boil. Then reduce the heat to simmer.

Stir in sweet potatoes and spices and bring back to simmer. I used a handheld blender to puree. Add the milk and reheat soup.

Pour into warm bowls and enjoy!
