So as I scrambled through the leftovers in the fridge and the pantry I pulled out these ingredients~
Fresh garden tomatoes (I find that the taste is fresher when you don't refrigerate.
Fresh garden spinach. You can use basil too, it's just as good!
Soft Mozzarella cheese (the kind that is made at the supermarket and comes in a ball, not shredded)
Left over flour tortillas small size (from Mexican meal we had prepared the night before)
Place a tortilla into a heated cast iron skillet to create grill marks on one side. The grill would work for this recipe too :-D
Flip the tortilla over and place slices of beefsteak tomato, spinach, mozzarella cheese and oregano on top.
Drizzle a small amount of olive oil on top to help get that roasted veggie effect. Salt and pepper to taste.
You can also add cooked meat like sausage, meatballs or bacon on this dish.
Place in the oven and broil for about 5-7 minutes.
Slice into triangles or fold over into a half circle and serve with your favorite tomato sauce or soup~ Mangia and enjoy! :-D
